Peppermint Mocha Loaf
Ingredients
3 eggs
3/4 cup almond flour
1/4 cup coconut flour
1/4 cup cocoa powder
1/2 cup maple syrup
1/4 cup melted ghee or butter
1/4 cup cashew butter
1/4 cup peppermint chocolate chips ( I used @lilys_sweets mint baking chips)
1 tsp baking powder
1 tsp peppermint extract
Method
In a mixing bowl, whisk the eggs
Then add in everything besides the chocolate chips
Mix together well
Fold in the chocolate chips
Add to a loaf pan and bake at
350F for 40 mins
Remove, let cool, top with icing of choice ( I used simple mills), and crushed candy canes!
Then slice and enjoy!
