Sweet Potato Pancakes

Yet another sweet potato recipe… but I promise these 4 ingredient sweet potato pancakes are going to be your new favorite way use sweet potatoes!

I know I know I know you probably think I’m a crazy person for the amount of sweet potatoes I eat haha. But seriously they are one of the easiest ways to get paleo, gluten free recipes. AND they’re inexpensive.

I baked my sweet potatoes the night before to save time in the morning. Seriously one of the best ways to save a little time! You don’t even have to make a recipe with them- just eat a baked sweet potato along with an egg and avocado. If you are looking for an easy recipe though, this is the recipe for you!

Also, if you don’t have a sweet potato prepped- you can just toss it in the microwave for 3-4 minutes. Make sure you take a fork and poke holes in it though.

I took my sweet potatoes ( I used 3 small ones), peeled them, then mashed them with a fork. It ended up being 1 1/2 cups. Added that into my blender with all the other ingredients! The secret to making this recipe into a batter is blending it- mixing it by hand doesn’t get it smooth enough.. or maybe I’m not strong enough haha.

Then I sprayed my cast iron skillet with a little non stick spray ( I use Trader Joe’s coconut oil spray typically) and cooked over low medium heat. I used a spoon and just used about 2 spoonfuls per pancake.

The recipe made 6 1/2 little mini pancakes! I’m not a nutritionist so I’ll never personally recommend serving sizes- eat what makes you feel good!

I love savory pancakes so that’s how I ate mine- with a crispy fried egg + avocado. The best way to do savory pancakes! Saving the leftovers in a container in the fridge for later. They’d probably keep 4 days in the fridge but I know mine will be gone before then haha.

Sweet Potato Pancakes

Easy, healthy, paleo sweet potato pancakes! They require only 4 ingredients- a total win in my book!

Ingredients

1 1/2 cups mashed cooked sweet potato (about 3 small sweet potatoes)

2 eggs

1/2 tsp baking powder

1/2 scoop vanilla protein powder

Method

  1. Cook the sweet potatoes- I baked mine the night before at 400F for 50 mins or you could microwave morning of for 3-4 mins
  2. Peel the sweet potatoes and mash with a fork
  3. Combine all ingredients into a blender and blend until smooth
  4. Spray a skillet with non stick spray and heat over low medium heat
  5. Use a spoon and spoon out batter into the pan
  6. Cook for 3-4 mins on each side!
