Healthy S’mores Cookies

One of my all time favorite cookie recipes ever. The perfect texture with this soft, chewy cookie mixed with the ooey, gooey marshmallows + melty chocolate chips. Sounds pretty perfect, right? This dessert will be on repeat this fall because s’mores = fall in my book! Not that these wouldn’t be delicious anytime of year but they especially hit the spot during these cooler nights. I can’t believe I’ve lived 23 years without these healthy s’mores cookies in my life!

Recipe Tips:

This recipe is pretty simple because there aren’t many ingredients or steps to have your s’mores cookies in about 15 minutes. First, you’ll whisk the egg in the recipe before adding in the rest of the cookie ingredients. You want to leave out the chocolate chips and marshmallows so they don’t get smashed while you’re mixing the cookie batter.

To mix the cookie dough well, you want to probably use a hand mixer, stand mixer, or an immersion blender. You want the dough to be nice and smooth before you add in your chocolate chips and marshmallows. To add them in, I poured them into the dough then took a spatula and folded them in. Make sure they’re evenly distributed in the batter.

Why Collagen:

It helps keep me full longer so I’m not *as* tempted to reach from the second or third cookie haha. Ingredients

1 cup cashew butter

1 egg

1/2 cup coconut sugar

1 tsp baking powder

12 tbsp vanilla protein 

1/2 cup chocolate chips

1/4 cup marshmallows

Method

  1. Preheat oven to 350F 
  2. In a bowl, whisk your egg then add in the cashew butter, coconut sugar, and baking powder. 
  3. Mix all of these ingredients together well until the batter is smooth 
  4. Fold in with a spatula your chocolate chips and marshmallows
  5. Line a baking sheet with parchment paper. 
  6. Use a cookie scoop to form the cookies, I added a little batter to each though. 
  7. Makes about 9-10 small cookies. 
  8. Bake for 10 minutes, remove from oven, let cool on the baking sheet for 5 more minutes to let them finish cooking. 
  9. Enjoy! 
  10. Store on the counter for 3-5 days.
