I am a huge snacker so these no bake bars are right up my alley. I am not one of those people who can just eat three meals a day with no snacks in between or I turn into a hanger monster haha. 5 mini pancakes 1x
Single Serving Healthy Pancakes (gluten free)

  • 1/2 cup gluten free oat flour
  • 1/2 ripe banana
  • 1 egg
  • 1 tbsp vanilla protein ( I used @ritual, discount code 10peyton)
  • 1/4 tsp baking soda
  • 1 tablespoon oat milk (any milk works)
  • 1 tbsp melted butter
  • 1/3 cup blueberries

  1. Mix the flour, baking soda, and protein powder together
  2. In a separate bowl, whisk the egg and add in the milk, butter, and mashed banana
  3. Add the liquids to the flour mixture
  4. Mix well
  5. Fold in the blueberries
  6. Let the batter sit for 8ish minutes while you get a pan heated up. It allows it to thicken!
  7. Add a little oil to your pan and cook the pancakes for 3-4 minutes on each side.
  8. Make mini pancakes so they’re easy to flip, about 5 total pancakes.
