An easy and delicious way to have a vegan burger. And this recipe does not involve a bunch of complicated ingredients! Perfect for a summertime bbq or just a summer night in. These portobello mushroom burgers are so easy, you will want to eat them year round!

Recipe Steps:
This recipe takes a little bit of prep work but I promise it’s worth it and makes a difference. Letting the mushrooms marinade for 30 minutes to an hour allows them to absorb all of the delicious flavors. Trust me, you want that! So plan to get these burgers ready 40ish minutes before you’d actually want to eat them.
You’ll want to combine all of the marinade ingredients either into a small bowl or a ziplock bag. A ziplock bag allows the flavors to be all around the mushrooms better but a shallow bowl works fine too! I used a shallow bowl below.
If you’re using a shallow bowl, just make sure you brush the tops of the mushrooms well so they can absorb the flavors too.
Let the mushrooms sit in the marinade for 30 minutes to an hour. You can make whatever sides you want to pair with these portobello mushroom burgers while you wait!
After the mushrooms have soaked up the flavors, heat a skillet over medium heat. I used this grill skillet. Add a little olive oil. Then add the mushrooms. Cook for 5 minutes on each side. Enjoy!
Storage:
I recommend eating these burgers right away. I’ve found portobello mushrooms don’t reheat super well.

Ingredients
2 portobello mushroom caps
1 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp coconut aminos
1 tsp garlic
1 tsp smoked paprika
1/2 tsp salt
1 tsp maple syrup*
Method
- Wash and clean the mushrooms
- In a small bowl, combine all of the above ingredients besides the mushrooms.
- Mix everything together
- Put the mushrooms in a shallow bowl or a ziplock bag.
- Add the mixture and make sure the whole mushroom is coated
- Marinate for 30 mins
- Add olive oil to a grill skillet (or regular skillet) and cook 5 minutes on each side over medium heat.
- Served here with sweet potato and regular potato fries + avocado, onions, and tomato
