Taco Stuffed Sweet Potatoes

Okay okay okay… I know… I am sweet potato obsessed. There are worse obsessions… right? Haha meet me newest favorite use of sweet potatoes (be warned, it changes every day haha): Taco Stuffed Sweet Potatoes.

These are sooo dang tasty and so easy to make! You may think I’m crazy for another sweet potato recipe but trust me, you’ll love this one 😉

I’ve been trying to add more red meat into my diet for health reasons (been on and off anemic for the past year). I am not naturally a red meat fan so finding recipes that I actually enjoy with red meat is a struggle for me. Luckily everything that involves avocado and sweet potato is a win in my book (obviously based on my previous posts haha).

If you checked out my other fajita recipe: Chicken Fajita Stuffed Spaghetti Squash ,it’s pretty similar! Sub out grass fed beef and sweet potato and it’s just a different variation.

When adding in more meat to my diet, I always try to make sure that it’s high quality meat. I look for grass fed, organic beef. You can find it relatively cheap at Aldi ($5.50 for 4 servings). Even Walmart carries it now! Especially if you’re trying to balance hormones, it’s important to check to see if the meat has added hormones.

The key to me when trying to eat food I don’t necessarily *love* is seasoning seasoning seasoning. When in doubt, add more spices haha. I am lazy when it comes to fajita seasoning, I always use a pre-made package. It’s much easier and it really isn’t much more expensive than if you went out and bought all the spices individually.

I try to use organic packets so I use Primal Palate Taco Seasoning. but most health food stores will have some great options! Or you can google a homemade fajita combo as well!

I prepped a bunch of baked sweet potatoes (used some in this recipe yesterday) and reheated some to use with this recipe today. All I did today was sauté the veggies and the ground beef, mash some avocado, and top it with red pepper flakes! Ready in 10 minutes versus 50 minutes if I had to make the sweet potatoes day of.

Pretty easy and pretty dang tasty!

Taco Stuffed Sweet Potatoes

A healthy, paleo, gluten free, grain free dinner packed full of flavor!

Cook Time
50 minutes

Ingredients

2 sweet potatoes

1 pound grass fed beef

1 avocado

2 Peppers

1 Onion

1 packet of fajita seasoning (I use Primal Palate taco seasoning)

Avocado Oil

Method

Sweet Potato Instructions: 

  1. Preheat oven to 400F
  2. Poke holes in the sweet potatoes with a fork
  3. Bake for 5o minutes

Taco Filling: 

  1. Preheat the oven to 400F
  2. Cut the two peppers and onion up
  3. Spray a pan with nonstick spray or use silicone baking sheets
  4. Coat the veggies in a tbsp of avocado oil and sprinkle with about 1/4 of the packet- more if you like more spice
  5. Bake the veggies for 15 minutes
  6. For the beef, heat a skillet over medium heat, add in avocado oil, then add the beef in. Season with 1/4 of the packet and cook until done- about 10 minutes.
  7. Served with mashed avocado on top!

Notes

*I make my sweet potatoes a few days before or the night before to save time then just reheat to pair with the meal!
