Fish Tacos with Mango Guacamole
I am in love with using fruit in savory recipes right now! Earlier this week, we had chicken teriyaki pineapple boats (recipe). Then last night we made these cajun fish tacos with mango guacamole. These are paleo, gluten free tortillas. You can use any tortilla you want but if you’re looking to keep the recipe gf + paleo make sure you get a brand that complies with that! We enjoyed these tacos outside on a perfect summer evening.
Here’s a way to make dinner a little more fun, make this air fryer vegan taco bowl. It’s also gluten free and made with only 3 ingredients. Plus, you can add in whatever you want! I added sauteed tofu, tomatoes, avocado, onion, and vegan feta on top.
Instant Pot Vegan Burrito Bowls
This vegan lentil taco meat has so many uses! I use this easy recipe for taco bowls like this recipe or actual tacos, quesadillas, nachos, etc. You can throw this on any recipe you use regular taco meat for! The nice thing about this meal is lentils are so inexpensive compared to chicken or beef. You can make an easy, inexpensive vegan meal!
