Air Fryer Buffalo Chicken Salad

This Air Fryer Buffalo Chicken Salad is the real deal. Is there anything better than buffalo chicken and ranch?? This healthier version is SO easy to make for a quick, gluten-free weeknight dinner. I just marinated the chicken in a mixture of buffalo sauce + greek yogurt and it was the perfect combo! Using the air fryer makes recipes so simple, too. Packed with veggies and protein, this buffalo chicken salad is a healthy (and delicious) meal idea. Put this in your weeknight dinner menu rotation. What You Will Need For This Recipe:

Chicken breasts 

Stonyfield organic greek yogurt 

Buffalo sauce 

Garlic powder 

Salt

Apple cider vinegar 

Dijon mustard 

Dried dill

Dried parsley

Milk

Lettuce

Chopped tomatoes 

Shredded carrots 

Avocado 

Blue cheese (or feta cheese)

Ingredients

Buffalo chicken:

3 chicken breasts 

1 cup Stonyfield organic greek yogurt 

½ cup buffalo sauce 

1 tsp garlic powder 

½ tsp salt 

Yogurt ranch dressing:

1 cup Stonyfield organic Greek yogurt 

1 tsp apple cider vinegar 

1/2 teaspoon Dijon mustard 

1 tsp dried dill

1 tsp dried parsley

1 tsp garlic powder

Salt to taste 

2 tbsp milk

Salad:

4 cups lettuce 

1 cup chopped tomatoes 

½ cup shredded carrots 

1 avocado 

½ cup blue cheese or feta cheese 

Method

Buffalo Chicken:

In a bowl, combine the chicken with the Greek yogurt, Buffalo sauce, & spices. Let marinate for at least 30 minutes up to 4 hours 

Preheat air fryer to 400F. Air fry for 8 minutes, flip and air fry for 10-12 more (until internal temp is 165F) 

Ranch dressing:

Combine all of the ingredients in a blender or food processor and mix together 

Assemble everything into salads. This makes 3-4 salads!
