An easy 6 ingredient avocado egg salad recipe that is mayo free! If you haven’t liked egg salad in the past, try this recipe. I think the flavor of it is less egg-y than regular egg salad. Lots of flavor still though. It’s the perfect healthy meal prep lunch because you don’t need to reheat it!

Storage Tips:

You can add a little lime or lemon juice on top of this avocado egg salad to keep it from browning. It will brown over a few days but it’s still okay to eat! If it’s just you eating it, I wouldn’t worry too much about it turning brown. It’s natural and normal! Store in an airtight container in the fridge.

What to Pair with it:

I paired mine with sourdough and hot honey. This is a great side dish but I love making sandwiches and wraps with it for lunch! Or on top of a piece of toast for a healthy snack.

I love this easy gluten free pasta salad recipe because it’s loaded with vegetables and really simple to make. All you have to do is boil some pasta and chop your veggies, that’s it! I like simple recipes in the summer because who wants to spend hours in the kitchen when it’s so hot? No thank you. This recipe doesn’t require you to turn your oven on either which is nice.

Avocado Egg Salad (paleo, gluten free, healthy)

Ingredients

  • 6 hard boiled eggs
  • 3 small avocados or 2 large avocados
  • 1 tsp garlic
  • 1 tsp lemon juice
  • 1 tsp parsley
  • 1/21 tsp crushed red pepper flakes
  • Salt and pepper to taste*

Method

  1. Boil the eggs for 10-12 minutes
  2. Peel
  3. Add to a bowl
  4. Add the avocado and spices
  5. Mash the eggs and avocado and mix together
  6. Eat as a side dish or turn it into a sandwich!
