This easy gluten free pasta bake is so easy to make and it makes a TON! Leftovers for dayssss. This is a great meal prep option for this reason! Or a great dinner for a weeknight because it is pretty simple. Loaded with chicken, spinach, mushrooms, onions, and lots of cheese! Of course, you can add as much or as little cheese as you want to!

Gluten Free Pasta

Chicken Breasts 

White Onion 

Spinach 

Pasta Sauce

Mozzarella Cheese 

Mushrooms 

Italian seasoning

Recipe Tips:

You can use any gluten free pasta that you want! I used ALDI’s gluten free brown rice pasta. Worked super well in this recipe! Also, you can use any vegetables you want in this recipe. I went with mushrooms, onions, and spinach. Kale works great too! Hope you enjoy this easy gluten free pasta bake.

Easy Gluten Free Pasta Bake

Gluten Free Easy Pasta Bake. A delicious and easy dinner recipe the whole family will love! Cheesy, veggie packed meal.

Gluten Free Easy Pasta Bake

Ingredients

5 cups pasta (I used ALDI gluten free brown rice pasta)
2 chicken breasts
1 white onion
1/2 cup spinach
2 1/2 cups pasta sauce of choice
1/2 cup mozzarella cheese
1/2 cup mushrooms
1 tsp Italian seasoning
2 tsp garlic powder
Sprinkle of salt

Method

1-Cut the chicken breasts into small strips. Then dice the onion and mushrooms.
2- heat a large skillet over medium heat then add a little olive oil then the chicken + 1 tsp garlic + Italian seasoning + salt. Sauté for 5 minutes.
3- Then add the onion and mushrooms + another tsp of garlic powder. Cook for about 5-10 more minutes. Then add spinach.
4- cook pasta according to package instructions minus 1 minute. Then strain and set aside.
5- add sauce to the pan. Let it simmer about 5 minutes over low heat.
6- then mix in the pasta.
7- If your pan isn’t large enough, add everything to an oven safe casserole dish instead.
8-sprinkle the cheese on top.
9-  Bake at 400F for 5ish minutes until the cheese browns on top! You can broil to get it extra crispy! Makes about 6-7 servings!
