This is always my go to for Thanksgiving when I don’t know what to make because it’s so easy and it travels well (just add the dressing later!) Ingredients
1 lb shaved Brussels sprouts
1 cup chopped kale
1 tbsp olive oil
1/4 cup cranberries
1/4 cup chopped pecans
1 red apple chopped
1/3 cup cooked bacon (crumbled)
1 cup sharp cheddar (shaved)
Dressing (my go to salad dressing in the fall):
4 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp dijon mustard
1 tbsp honey
1/2 tsp garlic powder
Salt and pepper to taste
Method
Massage the kale and Brussels sprouts with 1 tbsp olive oil
Add the bacon, cheese, pecans, and cranberries
Mix together with a spatula
In a small bowl, whisk the dressing ingredients.
Add the dressing when you’re ready to serve! Enjoy!
