You’re going to love this Brussels Sprout Salad with bacon, pecans, apples and cranberries. It’s basically fall in a bowl! I love these flavors together – they are so festive and satisfying. There’s just something about the sweet and savory combo in a salad. This is always my go to for Thanksgiving when I don’t know what to make because it’s so easy and it travels well (just add the dressing later!) Definitely put this one on the menu for all of your holiday get togethers.

Ingredients

1 lb shaved Brussels sprouts 

1 cup chopped kale 

1 tbsp olive oil 

1/4 cup cranberries 

1/4 cup chopped pecans 

1 red apple chopped 

1/3 cup cooked bacon (crumbled) 

1 cup sharp cheddar (shaved) 

Dressing (my go to salad dressing in the fall):

4 tbsp olive oil 

2 tbsp apple cider vinegar 

1 tbsp dijon mustard 

1 tbsp honey 

1/2 tsp garlic powder 

Salt and pepper to taste

Method

Massage the kale and Brussels sprouts with 1 tbsp olive oil 

Add the bacon, cheese, pecans, and cranberries 

Mix together with a spatula 

In a small bowl, whisk the dressing ingredients. 

Add the dressing when you’re ready to serve! Enjoy!
