Carrot Cake Energy Bites
Carrot cake energy bites! Super easy to make and they give me all the spring feels 🌷🌼🥕
Ingredients
1 cup dates
1 1/2 cups pecans
1/2 cup shredded carrots
1/3 cup shredded coconut
2 tbsp peanut butter
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
Sprinkle of salt
Icing:
1/2 cup white chocolate chips
1/2 tbsp coconut oil
Method
Shred the carrots & pat dry, removing extra moisture
Add all of the carrot cake ball ingredients into a food processor and pulse until a sticky dough is formed.
Take a cookie dough scoop and scoop out a serving of the carrot cake mix
Form into a ball and add to a plate lined with parchment paper
Repeat until you have no more dough
In a small bowl, add the white chocolate chips + coconut oil
Microwave for 30 seconds, stir, & repeat until melted
Dip each carrot cake ball in the icing or just drizzle it on top
Put the carrot bake balls in the fridge and refrigerate for at least 1 hour
Remove and enjoy!
