I’m so glad the weather is looking up! These little bites are packed with energy and nutrition, but are just as delicious as a slice of decadent carrot cake. Try adding these in to your weekly meal prep or snack rotation!

These no bake vegan carrot cake cookies are super easy to make! They’re also gluten free and paleo. I love no bake recipes, they’re hard to mess up which is a plus in this house. Carrot Cake Energy Bites

Carrot cake energy bites! Super easy to make and they give me all the spring feels 🌷🌼🥕

Prep Time
1 Hour


1 cup dates

1 1/2 cups pecans 

1/2 cup shredded carrots 

1/3 cup shredded coconut 

2 tbsp peanut butter 

1/2 tsp vanilla 

1/2 tsp cinnamon 

1/4 tsp ginger 

1/4 tsp nutmeg 

Sprinkle of salt 


1/2 cup white chocolate chips 

1/2 tbsp coconut oil 


Shred the carrots & pat dry, removing extra moisture 

Add all of the carrot cake ball ingredients into a food processor and pulse until a sticky dough is formed. 

Take a cookie dough scoop and scoop out a serving of the carrot cake mix 

Form into a ball and add to a plate lined with parchment paper 

Repeat until you have no more dough 

In a small bowl, add the white chocolate chips + coconut oil 

Microwave for 30 seconds, stir, & repeat until melted 

Dip each carrot cake ball in the icing or just drizzle it on top 

Put the carrot bake balls in the fridge and refrigerate for at least 1 hour 

Remove and enjoy!
