Chicken breasts

Salsa

Rice

Taco Seasoning

Black Beans

Corn

Optional Toppings: avocado, cilantro, lime, jalapenos, guacamole

What To Do If You Don’t Have an Instant Pot:

So, what if you don’t have an instant pot? Good news- you can still make this meal! Here’s what I recommend:

Bake the chicken with the same ingredients as the instant pot version. Bake at 400F for about 30 minutes or until the chicken is at 165F.

Then shred the chicken and add it to a pot or skillet on the stove. Add in the beans, corn, and cooked rice. Stir and heat over low medium heat until everything is warm.

Easy 6 Ingredient Chicken and Rice Instant Pot Meal

Ingredients

  • 2 chicken breasts 
  • 1 1/2 cups salsa 
  • 1/2 packet taco seasoning 
  • 1 15 ounce can black beans 
  • 1 15 ounce can corn 
  • 1 1/2 cups rice 

Method

  1. Add some olive oil to your instant pot 
  2. add the chicken breasts 
  3. add the salsa 
  4. add the taco seasoning 
  5. lock the instant pot 
  6. cook on manual high pressure for 18 minutes 
  7. while the chicken cooks, make the rice
  8. release the pressure 
  9. remove the chicken and shred it 
  10. add back to the instant pot 
  11. add the beans, corn, and rice 
  12. stir together 
  13. enjoy! 
  14. store in the fridge for 4-5 days or freezer for 2 months
