Sheet pan dinners are a favorite around here! They never disappoint because they are so easy to clean up. And any meal tastes a little better knowing you don’t have a million dishes to do afterwards haha. Not only is there minimal clean up involved, it’s also pretty simple to put together and not to mention delicious! Hope you all enjoy this chicken tenders and fries sheet pan meal!

There isn’t a meal that reminds me of my childhood more than chicken fingers and fries. That was basically a main food group for me back then. And honestly, I wouldn’t mind too much if it was now! I could eat these easy chicken tenders all the time and don’t get me started on my love for sweet potatoes. They are good any time of the day.
Paired with some dipping sauces, this meal is super family friendly. Dipping sauces make everything better. Some of my favorites are this ketchup and this barbecue sauce. Both are unsweetened so they don’t have a ton of added sugar. Sauces can be sneaky about adding in sugar so I always try to check beforehand to see how much is in a container. Not that added sugar is the worst thing ever but I like knowing what is in what I’m eating!
Recipe Steps:
The first thing you need to do is make the sweet potato fries. A tip is if your sweet potato is too tough to cut into, microwave it for a few minutes to soften it a bit. Then coat with the olive oil and salt & pepper. Add to a pan lined with parchment paper and bake for 15 minutes.
While the sweet potatoes cook, it’s time to make the chicken tenders. You’ll mix the coconut flour and spices in a shallow bowl. Then whisk the egg in another bowl. Dip the chicken tenders in the egg the dip it in the flour mixture. Repeat for each chicken tender.
Add to the pan with the sweet potatoes, bake for 10 minutes, flip, and bake for 10 more minutes. Pair with your dipping sauces of choice.

Ingredients
Sweet Potatoes:
2 large sweet potatoes
2 tbsp avocado oil
salt & pepper
Chicken Tenders:
1 lb chicken tenders
1 egg
1/4 cup coconut flour
2 tbsp nutritional yeast
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
Optional- sprinkle of chipotle powder for spice!
Method
- First cut the sweet potatoes into fries, coat with the avocado oil then sprinkle with salt & pepper.
- Bake at 400F for 15 minutes before adding chicken tenders
- Take 2 shallow bowls big enough to dip the chicken tenders in
- Add the egg to one and whisk
- Add the coconut flour + spices to the other and mix together.
- Take a chicken tender, dip in the egg, dip in the flour mixture. Repeat for each tender.
- After the 15 minutes for the sweet potatoes, add the chicken tenders to one side. Bake at 400F for 10 minutes, flip, bake for 10 more minutes.
- Check the internal temp of the chicken to make sure it’s done! Enjoy!
