Chocolate Pumpkin Paleo Pancakes

My favorite banana pancake recipe updated for fall- helllllo chocolate pumpkin paleo pancakes!

I love making my go to banana pancake recipe and then adding in different seasonal flavors! This time I went with chocolate pumpkin aka one of the BEST fall flavor combos. It sounds weird but somehow it is just magical!

I don’t have any diet restrictions personally but if you’re paleo, gluten free, or just looking for an easy and cheap healthy pancake solution- this should be your go to recipe!

I make little mini pancakes as you can see here because I like feeling that I have more food rather than just one or two big pancakes! Plus- it’s SO fun to stack them haha.

The KEY to making your pancakes not sad, little, flat circles is this: when you go to make the recipe, don’t completely mash the banana. Leave it a little lumpy to give the pancakes some texture!

The nice thing about this recipe is that it is single serving aka you don’t need to share haha. But it can easily be doubled to make leftovers for yourself or if you’re feeling generous enough to share!

Chocolate Pumpkin Paleo Pancakes

Healthy and simple paleo pancakes- made even better by adding in alllll the chocolate pumpkin flavor! Perfect easy recipe for any morning

Paleo pancakes with bananas, chocolate chips, peanut butter drizzle on a white plate

Ingredients

2 eggs

1 banana (mashed)

1 tsp cinnamon

1/2 scoop Chocolate flavored protein ( I used Ancient Nutrition Chocolate Collagen)

1 tbsp pumpkin

Method

  1. Mash up the banana but leave it a little lumpy
  2. Whisk eggs together in a bowl
  3. Add mashed banana, cinnamon, protein powder, and pumpkin into the bowl with the eggs
  4. Mix it all together
  5. Heat a skillet over medium heat and spray with non stick spray
  6. Use a spoon to form pancakes in the skillet, cooking until they start to bubble, then flip
