Cinnamon Swirl Banana Bread Skillet
A delicious, healthy breakfast recipe that is paleo, gluten free, and the perfect start to the day! This cinnamon swirl banana bread skillet is perfectly soft on the inside and crispy on the outside. Topped with a delicious cinnamon sugar mixture. I could eat different variations of banana bread every morning and this is one of my favorites so far!

Recipe Steps:
This recipe is pretty straight forward! You’ll whisk the eggs first in a bowl before adding the rest of your banana bread ingredients. Mix well with a hand mixer or stand mixer.
In a small bowl, mix together the cinnamon sugar mixture.
Add the banana bread batter to a greased baking dish. I used a medium sized cast iron skillet. Then sprinkle to cinnamon sugar mixture on top. I attempted a swirl to make it pretty haha.
Bake for 40-45 minutes then let it cool before diving in. This cinnamon swirl banana bread also makes a great meal prep breakfast! Store in the fridge for 4-5 days. You can also freeze and reheat later.
Baking Dish Options:
I used a medium sized cast iron skillet but this recipe also works in a small loaf pan! I personally like the cast iron skillet option if you have one because it gets the edges crispy while also keeping the middle nice and soft.

Ingredients
Banana Bread:
2 eggs
2 bananas
1/4 cup unsweetened almond milk
1/4 cup + 1 tbsp coconut flour
1 tbsp cinnamon
1/2 tsp baking powder
1/2 tsp vanilla
2 tbsp nut butter
Cinnamon sugar mixture:
1/4 cup coconut sugar
1/2 tsp cinnamon.
Method
- Preheat oven to 350F
- In a bowl, whisk the eggs
- Then add in the rest of the bread ingredients and mix well.
- Grease a small baking dish (I used a small cast iron skillet).
- Add the batter then sprinkle the cinnamon sugar mixture on top.
- I tried to swirl mine but it didn’t turn out quite right 😂
- Bake for 40-45 minutes.
- Let cool then eat!
