Have you ever seen a cuter way to use zucchini?! Idk if you can really call food cute but it’s honestly the first thing I think of with these. Not only are they cute but these paleo zucchini banana bread bites are gluten free, paleo, healthy, and simple to make! Aka my favorite type of recipe because even though I don’t follow a specific diet, eating this way helps me feel better overall.

I typically freeze a lot of it but I also like to eat seasonally so finding ways to sneak it into baked goods helps solve the problem. It doesn’t have a ton of flavor so it compliments a lot of different baked goods. I’m partial to anything with banana though.
Sneaking veggies into baked goods is not only a win for you but if you’re a mom with young kids, I can imagine you’re always trying to do this. I’m not a mom but I was totally that kid that ignored anything green. These paleo zucchini banana bread bites will be a win in your book and their book 😉
If you aren’t a mom/dad, maybe you’re trying to get your significant other to eat more veggies (Might be talking about myself here…). Adding veggies into baked goods is such a good way to start! Just maybe wait until after they’ve tasted it to tell them there’s veggies in there haha. Just kidding, probably shouldn’t start telling little lies like that in a relationship but you know you gotta do what you gotta do 😉
Bite sized baked goods are the BEST because you can enough for a meal or just one/two as a quick snack. I love the mini size because then you don’t have to play the game of “just half of this” or waste some. So bite sized/mini form is always on repeat over here!

Paleo Zucchini Banana Bread Bites
Zucchini Banana Bread Bites that are paleo, gluten free, dairy free, healthy, and easy to make! A great healthy breakfast, healthy dessert, and a great healthy kid friendly recipe.
Ingredients
2 eggs
2 bananas
1/2 cup shredded zucchini
1/4 cup unsweetened almond milk
1/4 cup coconut flour
1/2 tbsp cinnamon
2 tbsp almond butter
1/2 tsp baking powder

- Preheat oven to 325F
- Shred a zucchini, enough for 1/2 cup
- In a bowl, whisk 2 eggs.
- Add in 2 bananas, mashed. Then add in the rest of your ingredients.
- Mix well with a hand mixer or immersion blender.
- Line a mini muffin tin with mini muffin liners.
- Bake for 20 minutes.
- Makes 21 mini muffins.
- You’ll have leftover batter so can make more muffins, make regular sized muffins, or I actually made donuts!
