Easy Paleo Waffles

Waffle Wednesday is in full effect over here with these super easy, paleo waffles! Topped with my easy 2 ingredient blackberry jam  + almond butter + bananas.

Simple ingredients- perfect for a single serving of waffles or you can double the recipe if you’re feeding more people! I normally make double servings because you’ve got to have leftovers!! 😉

I wanted to keep this recipe relatively simple but found that it needed a little something extra to sweeten it up. I used coconut sugar but you could use whatever sweetener you like in recipes!

I made these paleo waffles a PB&J flavor because it’s just the perfect combo! Used my homemade 2 ingredient blackberry jam + almond butter to keep it paleo! I’m not specifically paleo but I like making recipes that fit that diet sometimes just because I’ve found my body does well with it!

The jam only takes about 10 minutes to make and now I have leftovers for the rest of the week! Aka going to just be eating it straight from the jar haha. One thing I don’t have leftovers of: these waffles! Devoured all 3 within minutes haha.

Simple, healthy, and really easy to meal prep! Make them on a Sunday or the night before, heat them up in the toaster (keeps them crispy!), and you’ve got an amazing waffle Wednesday breakfast!

Easy Paleo Waffles

Easy Paleo Waffles! Gluten free and simple to make- you’ll be craving these every day of the week! Topped with my 2 ingredient blackberry jam and almond butter

2 eggs

2 tbsp coconut flour

1 tbsp almond butter

1/2 tbsp cinnamon

1/4 tsp baking powder

1 tsp coconut sugar*

1 tsp vanilla


Heat your waffle iron

Combine all ingredients into a bowl

I made three small waffles but it makes one big waffle


*can sub sweetener of your choice
