French Toast For One

Yet another single serving recipe. When it comes to french toast, I feel like I always make a ton with a recipe which is amazing but also a girl can only have so much french toast haha. This simple, easy recipe is the perfect single serving version of the classic dish! This french toast for one will be your new favorite breakfast 🙂

I love making single serving breakfasts- they’re so nice if you have a craving for something but maybe don’t want to have it all week long. I know not everyone is a big meal prep fan so this is a great option if that’s not your thing!

I use sourdough bread a lot in my french toast recipes because it is one of the only breads that doesn’t have added sugar. Also it’s fermented differently than other bread so it’s easier to digest! I normally try to get mine from Trader Joe’s because it’s the best value I have seen.

I mixed all of the french toast ingredients together (egg, egg whites, cinnamon, coconut sugar, unsweetened almond milk) then added the cubed bread into it. Soak up all the goodness and then put it in the oven for 35-40 mins!

I like using ramekins to bake my single serving breakfasts but you could use a small baking dish as well. Walmart, Target, a lot of places have them for just a couple dollars!

I topped my french toast with organic maple syrup, banana, dairy free chocolate chips, and cinnamon. I also sprinkled a little more coconut sugar on top for added sweetness- totally a personal preference there though!

I devoured this in one sitting but you could save + reheat later too! Listen to your body and figure out what works for you 🙂

French Toast For One

This French Toast is a healthy, easy breakfast for one. Simple to make, minimal ingredients, and so tasty! An easy, healthy breakfast.

Ingredients

23 slices of sourdough bread 

1 egg + 1 egg white 

1 tsp cinnamon 

1/2 tsp vanilla

2 tsp coconut sugar* 

1/2 cup unsweetened almond milk 

Method

  1. Preheat oven to 400F 
  2. In a bowl, whisk the egg and egg white. Then add in the milk, cinnamon, 1 tsp of the coconut sugar, and vanilla. 
  3. Cut the bread into cubes
  4. Add the cubed bread into the egg mixture and make sure every piece is coated. 
  5. Transfer the mixture into a small baking dish or a ramekin. 
  6. Bake for 35- 40 minutes. Pull out the french toast and sprinkle with 1 tsp of coconut sugar. 
  7. Add any toppings you want- I picked bananas, maple syrup, and chocolate chips. 

Notes

Use 1 tsp for the bake and sprinkle the other tsp on top.
