Single Serving Paleo Banana Bread

Dessert for breakfast is always a good idea 😉 And when it’s a single serving- you don’t even have to share! What more can you ask for?! I am not a huge sweet breakfast fan but I’ll make an exception for this single serving banana bread 😉 

I bought a cute little Christmas tree ramekin from the Target dollar bin and I am obsessed with it!! It’s going to be hard to resist creating a bunch of different recipes with it between now and Christmas haha. I can almost guarantee that there will be at least one or two more! 

This banana bread has pretty minimal ingredients and is simple to make! I made it as soon as I got up, went about my morning routine, and then devoured in straight out of the oven. Paired with a warm cup of coffee- seriously doesn’t get any better! 

I added some collagen into this recipe (used Ancient Nutrition Keto Collagen) to get some extra protein. I always look for grass fed, pasture raised collagen. It is totally tasteless and bakes really well into recipes. I use it in my French Toast recipes too: Healthy French Toast Sticks. Perfect addition to any recipe! It’s optional though, you can leave it out and still have an amazing recipe.

My last tip is, once you pull the bread out of the oven- sprinkle it with a little coconut sugar. It gives it the perfect little sugary crisp and kind of melts into the bread. Can you say YUM?!

Single Serving Paleo Banana Bread

This healthy, single serving paleo banana bread is the perfect breakfast for one!

Ingredients

1 ripe banana

1 egg

2 tbsp unsweetened almond milk

2 tbsp coconut flour

1/2 tbsp cinnamon

1/4 tsp baking powder

1 tbsp almond butter

1/2 scoop of collagen/protein powder*

Method

  1. Preheat oven to 350F degrees
  2. Spray a ramekin or small baking dish with nonstick spray
  3. In a bowl, whisk the egg.
  4. Add in the banana and mash it with a fork
  5. Mix the egg and banana together, then add in the rest of the ingredients
  6. Pour into the dish and bake for 20-25 minutes
  7. Optional but once it’s done baking sprinkle with a little bit of coconut sugar before eating
