Healthy Cinnamon Rolls
Yup you read that right- these dreamy, soft, healthy cinnamon rolls are gluten free and vegan! Plus- no yeast needed for this recipe. These are a no fuss, no frills cinnamon roll recipe that won’t make you feel like you need to save them for a special occasion. They’re perfect for a slow Saturday morning or to meal prep to have all week long. I topped mine with melted coconut butter which was just perfect!

What You Need For These Cinnamon Rolls:
Gluten Free Oat Flour or Gluten Free Oats
To make oat flour, just pulse your gluten free oats in a food processor until it’s a flour consistency.
Greek Yogurt or Greek Style Vegan Vanilla Yogurt
I like using Kite Hill Greek Style yogurt in this recipe. It has a great texture and flavor. Any vanilla greek yogurt will be great!
Baking Powder
Cinnamon

Recipe Steps:
First, you’ll make the dough and place it in the fridge for 30 minutes. After you do that, you’ll roll out parchment paper and add extra flour to it. Then, roll out the dough on the parchment paper.
Then you’ll make the cinnamon sugar mixture in a small bowl. Sprinkle on the dough.
Then cut the dough into 5 strips longways.
Finally, you’ll roll the strips into the cinnamon rolls. Grease a small baking dish and add the cinnamon rolls in. Bake at 350F for 20 minutes.
Then I added melted coconut butter on top and devoured them!

Ingredients
Cinnamon Roll:
1 1/4 cup oat flour ( I used this brand here)
1 cup vanilla greek yogurt*
2 tbsp maple syrup
1 tsp baking powder
1 tsp Apple cider vinegar
Cinnamon sugar mixture:
1/4 cup coconut sugar
1 tsp cinnamon
Method
- Mix all of the cinnamon ingredients together and let it chill 30 minutes.
- Then put parchment paper on a flat surface
- Add extra oat flour to make sure the dough doesn’t stick.
- Roll out the dough, about 1/4 inch thick. I used a rolling pin but I greased it first so the dough didn’t stick. Meaning I just sprayed a little non stick spray on it.
- Try to roll it into a rectangle as much as possible!
- Then in a small bowl mix the cinnamon sugar mixture
- Sprinkle the mixture on the dough, leaving a little room on the edges.
- Slice the dough longways into about 5 slices
- Then roll them into cinnamon rolls
- Add to a small greased baking dish
- Bake at 350F for 20 mins
- Add melted coconut butter on top and sprinkle a little extra cinnamon!
- Makes 5 small cinnamon rolls!
