Healthy Eggplant Pizza
An easy, gluten free dinner! This healthy eggplant pizza recipe is the perfect way to add veggies to a pizza recipe. You still get cheese and pepperoni in there (or whatever toppings you enjoy) but also get lots of sauteed veggies on top of eggplant! Plus it’s ready in only 20 minutes and you could easily double it to make enough for the whole family.
Recipe Steps:
You’ll slice your eggplant longways. You should be able to cut about 5-6 slices. You want them about 1/4 inch thick. Don’t slice too thin or they won’t hold your toppings. Then add to a greased baking sheet.
Brush each eggplant with a little bit of oil of choice. I used avocado oil. You can use olive oil or anything you have on hand! I like avocado oil because it has a higher smoke point. Add to the oven and bake for 10 minutes.
While the eggplant cooks, saute the veggies in a skillet. Add a little oil to the pan before adding the veggies in.
When the eggplant is done, add some marinara sauce to them, the veggies, pepperoni, and cheese. Add the eggplant back to the oven and bake for 5 more minutes.
Tip- you can broil at the end for 1-2 minutes to get the cheese nice and crispy. But keep an eye on them or else they burn easily!
You can serve healthy eggplant pizza with an easy side salad or just eat by itself. It’s best if it’s eaten right away but you can save leftovers. I reheat the leftovers in the oven on broil to make sure they aren’t soggy the next day. Remember you can totally customize these toppings and add whatever you enjoy!

Ingredients
1 Large Eggplant
1 cup marinara sauce
1/2 white onion
1/2 cup chopped mushrooms
1/2 cup spinach
1/4–1/2 cup shredded cheese
pepperoni
Method
- Preheat oven to 400F
- Wash and clean the eggplant.
- Cut it longways into about 5-6 slices
- Add to a greased baking sheet
- Brush a little oil to each side of the eggplant
- Bake for 7-10 minutes
- While the eggplant is cooking, saute the spinach, onions, and mushrooms in a little oil
- Once the eggplant is done cooking, remove and add your sauce, veggies, pepperoni, and cheese.
- Bake for 5 more minutes and broil at the end for 1-2 minutes
