These healthy gingerbread oatmeal cookies are easy to make and absolutely delicious! The perfect way to start the day during the winter months. The flavor is delicious and they have the perfect amount of gingerbread flavor! Not overpowering but just enough to make you feel like you’re in a winter wonderland. Okay, maybe that’s a stretch but they’re ready in less than 20 minutes and perfect for on the go!

What You Need For This Recipe:

quick oats

egg

maple syrup

peanut butter

molasses

ginger

cinnamon

nutmeg

Substitution Options:

Maple Syrup- sub for honey

Peanut Butter- sub for any nut butter

Molasses- can omit

Gingerbread Oatmeal Cookies (healthy, gluten free)

Ingredients

1 1/2 cup quick oats (I use Bobs Red Mill Gluten Free)
1 cup peanut butter
1/2 cup maple syrup or honey
1 egg
1 tsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp molasses* 

Method

Preheat oven to 350F 
In a bowl, whisk 1 egg 
Then add in the oatmeal, peanut butter, maple syrup, ginger, cinnamon, nutmeg, and molasses.
Mix well with a spatula. 
Fold in any add ins you’d want- nuts, chocolate chips, dried fruit. 
Take a cookie scoop (or grease your hands with not stick spray) and add to a greased baking sheet. 
Take a fork then flatten the cookie. 
Makes 10 small cookies. 
Bake for 14-15 minutes, let cool, then eat! I added powdered sugar on top but omit if that’s not your thing!
