Healthy Pumpkin Waffles
These healthy pumpkin waffles are another easy fall breakfast recipe! Pumpkin spice everything this time of year, right? These waffles are paleo, gluten free, and made with pretty minimal ingredients! Whip up a batch and then freeze a bunch for an easy meal prepped breakfast during the week. Topping them with maple syrup is the only way to go đ A little melted butter on there too and it’s my dream meal!

Tips For These Waffles:
I like making them in a mini waffle maker because then they are perfect for meal prep. When they’re mini, it’s so easy to pop them in the toaster and reheat them for a quick breakfast. What’s better than starting the day with healthy pumpkin waffles?
I use this mini waffle iron from Amazon that’s only $10 and comes in so many cute colors!
I haven’t tested this recipe yet in a regular waffle maker but you can easily make mini waffles in a regular sized waffle iron. Just don’t pour batter to fill it all the way, pour about half of what you normally would. I think these will work fine as a regular waffle but I’ll update this post after I’ve tried it!

Ingredients
3 eggs
1/2 cup pumpkin pureĚe
1 1/2 cups almond flour
1 tsp vanilla
1 tsp baking powder
1 tsp pumpkin pie spice
2 tbsp coconut sugar
1/4 cup unsweetened applesauce
1–2 tbsp vanilla collagen or protein*Â
Method
- Whisk the eggs in a bowl
- Mix everything else together
- Heat your waffle iron
- Grease it with some nonstick spray, add your batter.
- Let the waffles cook according to the timer on your waffle maker.
- I topped these with butter (it melted before I could take a pic) + maple syrup!
- Makes 6-7 mini waffles
