Honey Mustard Chicken Salad

This honey mustard chicken salad is a delicious salad for spring and summer. This recipe makes enough for 4-5 salads so it is a great meal prep option for the week too! I marinated the chicken breasts in the same recipe as the dressing. Keeps things super simple and minimizes the amount of ingredients you need for the recipe.

What You Need For This Recipe:

chicken breasts 

honey 

paleo mayo (I used primal kitchen) 

dijon mustard 

garlic powder 

Salt and pepper 

paleo bacon

avocado

tomatoes

romaine

Recipe Tips:

You can marinate the chicken for about an hour or omit that step. I like letting the flavor soak in though! You can make the bacon anyway you want but I bake it with the chicken. Makes things super easy and easy clean up.

For add ins, I like to do tomatoes, avocado, and cooked bacon.

If the dressing is a little thick, you can add some water to thin it out to make it a dressing. It stores well in the fridge for 4-5 days. Hope you enjoy this honey mustard chicken salad!

Honey Mustard Chicken Salad (paleo, healthy)

Ingredients

  • 3 chicken breasts
  • 1/4 cup honey
  • 1/4 cup mayo (I used primal kitchen)
  • 2 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper

Other: 

  • paleo bacon 
  • tomatoes 
  • avocado
  • romaine

 

Method

  1. Mix honey, Mayo, mustard, garlic, salt and pepper together in a bowl
  2. Spread about 1/3 of it on three chicken breasts
  3. Let it marinate for 1 hour (or you don’t have to, it just soaks in the flavor more)
  4. Bake the chicken at 400F for 30 mins
  5. Use the rest of the sauce as a dressing! you can add a little water to thin it out
  6. I made 4 salads with this (I cut the chicken up enough for 4)
  7. I added bacon, avocado, and tomatoes to my salad!
