Shrimp Cobb Salad With Avocado Dressing

This shrimp cobb salad with avocado dressing is ready in under 20 minutes and packed with flavor! I love this avocado dressing for salads in the spring and summer. It requires only 5 ingredients and takes no time to make. It seems like all I’ve been making recently are salads and smoothies haha. But not mad about that when I have tasty salads like this for lunch!

Shrimp Cobb Salad (healthy, simple)

What You Need For This Recipe:

Shrimp

paprika

garlic powder

onion powder

oregano

cayenne

salt & pepper

Avocado Dressing: 

ripe avocado 

lemon

avocado oil (or olive oil) 

apple cider vinegar

salt and pepper to taste

Salad Add Ins:

I added in corn, tomatoes, avocado, egg, and cooked bacon. I made an easy avocado dressing to go on top of everything. The recipe for that dressing is at the bottom of this post, in the recipe section! Hope you enjoy this shrimp cobb salad with avocado dressing!

Shrimp Cobb Salad With Avocado Dressing

Shrimp Cobb Salad (healthy, simple). If you need a simple salad recipe for spring, summer, or any time of year, this salad is it! Paired with an easy avocado dressing. 

Shrimp Cobb Salad (healthy, simple)

Ingredients

Shrimp:

1 lb raw large shrimp 

2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp oregano

Sprinkle of cayenne

Sprinkle of salt & pepper

Avocado Dressing: 

1 ripe avocado 

juice of 1 lemon 

3/4 cup avocado oil (or olive oil) 

2 tbsp apple cider vinegar 

salt and pepper to taste

Toppings: 

Bacon

Corn 

Avocado 

Tomatoes 

Eggs

Method

  1. Peel the shrimp 
  2. Add to a bowl with the spices 
  3. Let marinate for 10-15 minutes 
  4. While the shrimp marinades, bake the bacon at 400F for about 15 minutes. 
  5. Also boil the eggs. I boiled 4 for 8 minutes. 
  6. Once the shrimp is marinaded, add to a pan heated over medium heat with a little olive oil 
  7. Cook for 4-5 minutes 
  8. While the shrimp cooks, add the dressing ingredients to a food processor. 
  9. Then assemble the salads! This makes enough for about 4 salads.
