Paleo Beef Tacos

10 minute tacos are the perfect easy dinner on a busy night! These tacos are paleo, gluten free, and packed with flavor! Paleo Beef Tacos are about to be your new favorite go to dinner 🙂

I’ve been trying to add more beef into my diet (I made taco stuffed sweet potatoes last week that were soooo good) to get in some extra iron. I am not the biggest red meat fan but I love making ground beef sautéed in some avocado oil and seasoning. It’s quick, easy, and impossible to mess up haha.

I like to make a big skillet of ground beef and then save the leftovers to use in other recipes throughout the week! I try to pat as much grease out as I can because it can get a little congealed at the bottom of a container if you don’t. But other than that- I just reheat it in the skillet or microwave later on.

I had two skillets out for this recipe but you could combine it all into one if you needed to. The reason I used two was I didn’t want my leftover beef to have leftover veggies in it. That way I could use it in other recipes later on. But do whatever works best for you- I understand not wanting to have more dishes to do.

I love using cast iron skillets because I think it gives food a great flavor. I also read online that it helps with anemia but don’t quote me on that. Either way they’re my go to for cooking meat, veggies, and everything in between!

I heated my two cast iron skillets over medium heat. Then I coated both in avocado oil. In one pan, I added chopped veggies. In the other, I added the meat. Seasoned both with Primal Palate adobo seasoning. Then I let the meat cook for about 10 minutes until it wasn’t pink. And the veggies cooked the same amount of time.

Now while the meat and veggies cooked, I got the best part ready: the paleo tortillas *insert heart eyes here* I used Mikey’s Paleo Tortillas but I also love using Siete Foods paleo tortillas. You can make your own as well! I’ve never done it but Pinterest has a million amazing recipes.

To heat these up (they are typically frozen), place two on a pan, put in the oven on broil. Broil for about 2-3 minutes, keep an eye on them. You want them to be crispy but not burnt! Then remove and add in all your favorite fillings.

I recommend topping with mashed avocado but that is totally up to you! Eli is glad I’m back home because he’s been surviving on take out and fast food. This is one of his favorites so you know that means it’s tasty haha. Happy hump day friends!

Paleo Beef Tacos

Healthy tacos that are paleo and gluten free. Perfect 10 minute dinner!

Ingredients

1 lb grass fed beef

1 pepper

Package of mushrooms

1 onion

Avocado

Jalapeno

2 paleo tortillas *

Taco Seasoning**

Spinach

Avocado Oil

Method

  1. Heat two skillets over medium heat
  2. Cut up pepper, onion, and mushrooms
  3. Add avocado oil to both pans to coat the bottom
  4. In one pan, add the cut up vegetables. In the other, add in the ground beef.
  5. Season both the veggies and the meat with the taco seasoning.
  6. Cook for 10 minutes or until the meat isn’t pink.
  7. While they cook, heat oven to broil, add two tortillas to a pan, broil for 2-3 minutes until crispy.
  8. Top the tortillas with the beef and veggies.
  9. Served with jalapeños and avocado
