Paleo Birthday Cake
Finally sharing the recipe for this easy paleo birthday cake! I made this last weekend for my birthday (check out my birthday blog post here) and it turned out way better than expected! This was my first time making a cake and I was so surprised with how easy it was! Just as easy as making a loaf. So if you’ve never tried a homemade cake before, give this paleo birthday cake recipe a try!

When I first embarked on the journey of making my own birthday cake, (yes I’m calling it a journey because sometimes it is a journey to hype yourself up to make a new recipe haha) I thought it was lame to make my own birthday cake. Then I felt old for using the word lame haha. But so glad I got out of my own head and did it because it was one of the best birthday cakes I have ever had!
I decided to do two layers because go big or go home, right? You can do just one layer, the recipe at the bottom of the post is separated into each layer so it’s easy to just do one of them! I did a lemon layer and a vanilla layer. I was a huge lemon cake fan when I was a kid and still am to this day. Give me a lemon cake > a chocolate cake any day!

Miss Jones Vanilla, Simple Mills Vanilla
Or you can easily make your own! I love this recipe from Paleo Running Momma here. I just used a store bought one to keep things simple.

Ingredients
Lemon Layer:
3 eggs
3/4 cup almond flour
1/4 cup coconut flour
1/2 cup maple syrup
1 tsp baking powder
1 tbsp zest of lemon
1/2 lemon squeezed
1 1/2 tbsp melted ghee or softened butter
Vanilla Layer:
3 eggs
3/4 cup almond flour
1/4 cup coconut flour
1/2 cup coconut sugar
1 tsp baking powder
1 tsp vanilla
1 1/2 tbsp melted ghee or softened butter
Method
- Preheat oven to 350F
- Lemon Layer:
- In a bowl, whisk the eggs. Then add in the flour, lemon zest, maple syrup, baking powder, lemon juice, and butter. Mix everything together well with a mixer. Then grease a 6 inch cake pan and add the batter
- Bake in the oven for 35-38 minutes.
- Vanilla Layer:
- In a bowl, whisk the eggs. Then add in the flour, vanilla, coconut sugar, baking powder, and butter. Mix everything together well with a mixer. Then grease a 6 inch cake pan and add the batter
- Bake in the oven for 35-38 minutes.
- Let both layers cool completely.
- Then take a knife and loosen them around the edges. Remove the cakes. Add frosting on top of one.
- Then stack the other on top of the iced one. This creates the middle layer of icing so make it as thick as you want.
- After you stack the cakes, add frosting all around with either a knife or a pastry knife.
- Add sprinkles and candles!
