These apple streusel muffins are the perfect fall breakfast! They are a fall must have- a cozy baked good with lots of cinnamon! What more do you need once the weather starts cooling down? Well hopefully it does eventually, it doesn’t quite feel like fall yet in Missouri. That doesn’t stop me from making all the fall goods though!

Apple Streusel Muffins (healthy, gluten free)


3 eggs
3/4 cup almond flour
1/4 cup + 1 tbsp coconut flour
1/2 cup maple syrup
1/4 cup applesauce
1/4 cup peanut butter* sub any nut butter
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1/2 apple diced
Streusel topping:
1/4 cup coconut sugar
1/4 cup almond flour
1/4 cup pecans
1 tsp cinnamon
Sprinkle of salt
3 tbsp applesauce


  1. In a large mixing bowl, whisk the eggs.
  2. Then add in the rest of the ingredients besides the apples.
  3. Mix well then fold in the apples.
  4. Add batter about 2/3 of the way up muffin cups then add the topping the rest of the way.
  5. Makes 9 muffins!
  6. Bake for 25 minutes at 350F.
