Paleo Breakfast Quesadilla

Easy, gluten free, and dairy free- this Paleo Breakfast Quesadilla is the perfect breakfast to check all those boxes! Having eggs for breakfast keeps things simple but they can get boring pretty fast. I added in lots of veggies to these scrambled eggs + all the salsa to keep them from getting repetitive!

In this recipe, I used Siete Food’s grain free, paleo tortillas (you can find them here on Amazon but I get mine at Natural Grocers or Whole Foods). I also like Mikey’s brand of paleo tortillas if you have those near you! They taste similar to regular tortillas and they don’t fall apart like other brands of paleo tortillas I’ve had.

To make this breakfast- I sautéed some veggies for a few minutes in the skillet, then added in two whisked eggs. It doesn’t take long to make scrambled eggs- about two minutes over low medium heat and they’re good to go!

I put my oven on broil and then got the tortillas ready. I think it’s way easier to broil the quesadillas vs cooking them in a pan because it’s easier to flip them! But you could also cook them in a skillet too- whatever you prefer!

I just sprayed a pan with non stick spray, added a tortilla, and used a spatula to get the eggs + veggies out of the skillet. Then I transferred the eggs to the tortilla, layered another one on top, and tossed in the oven! I broiled for about 4-5 minutes- keep an eye on them or they’ll burn!

The best part about these quesadillas is you can use any veggies you have on hand + any toppings you want! Salsa, avocado, jalapeños, or sour cream would be amazing! So simple and so yummy!

Paleo Breakfast Quesadilla

A paleo and gluten free breakfast quesadilla packed with veggies and simple to make!

Ingredients

2 Grain Free Quesadillas

1/4 cup chopped bell pepper

1/4 cup chopped spinach

2 eggs

1/4 chopped onion

Salsa

Red Pepper Flakes

Avocado oil

Method

  1. Heat skillet over low medium heat and turn oven on broil
  2. Add some oil and chopped pepper, onions, and spinach into the skillet
  3. Sauté for 5 minutes or until soft
  4. Whisk two eggs in a bowl then add into the skillet, cook another 2 minutes
  5. Spray a pan with non stick spray, layer a tortilla on, then add in egg mixture, top with another tortilla
  6. Cook for 4-5 minutes on broil- keep an eye on them, they burn easily!

Notes

You could also cook these in a skillet vs the oven!
