Paleo Sweet Potato Waffle

Sweet Potatoes in waffle form.. is there anything better?! Coming from a sweet potato obsessed person- the answer is no haha. I love pancakes but there’s something about a crispy waffle that gives it a tiny edge in my book. This paleo sweet potato waffle is one of my favorite waffle recipes! I’m also adding some Cyber Monday Waffle Makers at the end of this post!

If you follow me on Instagram, you know I have an unhealthy love of sweet potatoes haha. They are one of my favorite foods to meal prep because they reheat well. Sweet potatoes can also be used in soooo many different recipes! (like pancakes, taco stuffed, breakfast stuffed, shrimp stuffed, and loaded chips)

I’ll bake a few potatoes on Sunday and have them to use all week long! If you make different recipes with them, it keeps things from getting boring. If you make the sweet potato beforehand, it saves so much time when making this recipe!

Another way to keep recipes from getting boring? Add allllll the toppings 😉 Toppings are my favorite part of breakfast haha. I added dairy free chocolate chips, plain yogurt, caramelized bananas, and organic PB to this waffle. Makes a delicious recipe 10x better!

For the caramelized bananas:

Slice a banana into coins, heat a pan over low medium heat, add in coconut oil, then sprinkle bananas with cinnamon, cook for about a minute or two then serve! So easy but so tasty!!

Already dreaming about making these waffles again but making them Christmas-y flavored- how good does that sound?!

The key to making these waffles is to ignore that green light on your waffle maker and instead set a timer for 10 minutes. They fall apart if you take them out too early so make sure you follow that!!

Paleo Sweet Potato Waffle

Healthy, paleo, gluten free sweet potato waffles! Made with a leftover baked sweet potato for an easy but delicious breakfast.

Ingredients

1 cup mashed sweet potato (1 medium sweet potato baked)

1 egg

1/2 scoop Further Food collagen (discount code: Choosingbalance)

2 tbsp coconut flour

1/4 cup unsweetened almond milk

1 tsp cinnamon

Method

Baked Sweet Potato: 

  1. I bake this a few days before or the night before making these.
  2. Preheat oven to 400F, poke holes in the sweet potato, bake for 50 minutes

Waffle Recipe: 

  1. Combine all ingredients into a bowl
  2. Mix well.
  3. Cook in a waffle maker for 10 minutes, ignore the green light on top
  4. Serve with all your favorite toppings!
