S’mores Cookie Bars
Another s’mores recipe over here (if you missed it- my s’mores cookies are here). These s’mores cookie bars are gluten free, ready in 25 minutes, and totally drool worthy. Like, melt in your mouth delicious. This is my first cookie bar recipe and I have to say, they may be my new favorite dessert. A mixture of cake, brownie, and cookie- what more could you ask for? Why I Love This Recipe:
First off, how can one not enjoy something that is packed with marshmallows and chocolate?! I mean, can you think of any better dessert combo? S’mores always remind me of bonfires out by our fire pit growing up. We had some land and any fallen sticks or trees we’d gather up for a big bonfire on the weekends. We’d roast s’mores and feed marshmallows to my dog who LOVED them. Can’t blame him because they’re the best.
Now, living in a condo with Eli and the dogs with no fire pit doesn’t really allow for s’mores fun. Sure we could microwave them but what’s the fun in that? So instead I have these s’mores cookie bars to bring back the childhood mems and satisfy the craving for a warm, gooey s’mores. These babies are in cookie form too which elevates the recipe in my book! If you’re craving a s’mores, this is the recipe for you.
Recipe Tips:
This recipe isn’t too complicated honestly. I love to cook and bake but I’m not a fan of recipes that have 15 steps. Cooking should definitely be fun but who has time for that on a nightly basis?! This recipe is ready in 25 minutes and takes about 5 minutes to prep. Plus only requires one bowl + one baking pan so less dishes for you. That should be reason enough to make these bars haha.
When you add the cookie bar mixture to the brownie pan, I’d recommend using parchment paper because it’s easier to remove the bars when you have it lined. To keep the parchment paper from moving when I add the batter in, I use clothespins to clip it down. Then I remove them before adding the pan into the oven (very important to remember haha)
Substitutions:
For the maple syrup, you can sub honey. For the flours, I don’t recommend subbing any other flours. If you do want to sub different flours, always google the proportions because most flours aren’t a 1:1 ratio
How To Store:
Store on the counter for 3 days or in the fridge for up to 5 days.

S’mores Cookie Bars
These healthier s’mores cookie bars are an easy, healthy dessert that are simple and gluten free. Made with almond flour, coconut sugar, and a bunch of delicious ingredients. Perfect healthy dessert for the holidays as well. Healthy holiday dessert everyone will love.
Ingredients
2 eggs
2/3 cup almond butter
1 cup almond flour
2 tbsp coconut flour
1/2 cup coconut sugar
1/4 cup maple syrup or honey
1 tsp vanilla
1 tsp baking powder
1/2 cup chocolate chips
1/2 cup marshmallows
Method
- Preheat oven to 350F
- In a bowl, whisk 2 eggs
- Then add in everything else besides the chocolate chips and marshmallows.
- Mix well with a hand mixer.
- Add the chocolate chips and marshmallows in. Fold in with a spatula.
- Line a brownie pan with parchment paper.
- Add the batter to the pan
- Bake for 25-27 minutes.
- Let cool. slice, and enjoy š
