These are our new favorite meal prep recipe! So perfect for a healthy breakfast, snack, or dessert. These pumpkin oatmeal cookies are made with only 5 ingredients and an easy 1 ingredient icing. Plus they’re ready in about 15 minutes and store really well for the week ahead! Everyone in our family was a fan!

What You Need For These Cookies:
Pumpkin Puree
Maple Syrup
Pumpkin Pie Spice
Nut Butter of Choice
Recipe Tips:
This recipe works well with whatever you want to add into it! Chopped nuts, dried fruit, chocolate chips, chia seeds, protein powder- you can seriously add so many things! I personally love adding some chocolate chips because I think the chocolate + pumpkin combo can’t be beat!
You can use any nut butter you want in this recipe or sunbutter if you have a nut allergy.
Let these pumpkin oatmeal cookies cool a little before you add the icing or else it all melts when you add it to the cookie.
Also it’s nice to let them cool because the hold together best if they have some time to cool!

Ingredients
Cookies:
1 1/2 cup quick oats (can use gluten free to keep this recipe GF!)
1/4 cup pumpkin
1 tsp pumpkin pie spice
1 cup peanut butter
1/2 cup maple syrup
Icing:
Melted Coconut Butter
Method
- Mix everything together in a bowl
- I sprayed my hands with a little non stick spray because the batter is sticky.
- Form balls with the dough then add onto a greased baking sheet.
- Makes 9 cookies. Then press them down a little
- Preheat oven at 350F then bake for 14-15 minutes.
- Let them cool then add your icing on top!
- I used coconut butter but you can use a little mixture of powdered sugar and milk too.
- Just add a tiny splash of milk to 1/3 cup powdered sugar
- Makes 9 cookies
