Vegan and Gluten Free Sweet Potato Casserole
Who is ready for Thanksgiving?! Give me all the sweet potato dishes on Turkey Day! I love twice baked sweet potatoes, mashed sweet potatoes, scalloped sweet potatoes, and of course this sweet potato casserole! This sweet potato casserole is vegan, gluten free, and paleo. But you’d never know it! The perfect way to meet any dietary needs while still enjoying traditional Thanksgiving foods 🙂

What You Need For This Recipe:
Sweet Potatoes
Coconut Sugar
Coconut Oil
Almond Milk
Cinnamon
Vanilla
Salt
Pecans
Almond Flour
Recipe Tips:
This casserole is made in a small casserole dish so it isn’t a huge portion. So if you have a big group for Thanksgiving or want leftovers, I’d double this recipe! I’d say this is 8 portions. So just use that to decide what size you need!
For the sweet potato mixture, you want to make sure it’s mixed together well! You can use a hand mixer, an immersion blender, or a stand mixer. Honestly you can even throw it in the blender!
For the topping, you’ll chop it up in the food processor. For texture purposes, you can add some whole pecans on top of the crust. You don’t have to but I think it has a nice crunch!

Ingredients
Sweet Potato Filling:Â
3 cups chopped sweet potatoes
(About 3 sweet potatoes)
2 tbsp coconut sugar
2 tbsp melted coconut oil
1/4 cup almond milk
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
Topping:
1/2 cup pecans
1/4 cup almond flour
2 tbsp coconut sugar
1 tsp cinnamon
Method
- Heat a medium pot of boiling water
- Peel and cube the sweet potatoes
- Boil for 15ish minutes, until they’re totally soft
- In a bowl, mash the sweet potatoes
- Then add in the rest of the casserole ingredients
- Mix together well.
- Grease a small casserole dish  and add the sweet potato mixture in.
- In a food processor, add the pecan topping ingredients and pulse together
- Add on top of the sweet potato mixture
- You can add a handful of whole pecans if you want them for texture!
- Baked at 400F for 20 Minutes.
- if you add marshmallows, Â add them right at the end and broil!

*This makes a small casserole. If you want a larger one, make sure to double the recipe!Â
