Chicken Enchilada Dip

I love this easy and tasty chicken enchilada dip! It’s the perfect, simple recipe to make to bring to a gathering for any occasion. Who doesn’t love a good dip? This appetizer is filling enough to be a meal! I used chicken here, although you can sub ground turkey or beef. Tortilla chips go great with it, but you could use anything, really. Diced red onion

Sweet corn

Enchilada sauce

Cheddar cheese

A delicious new vegan recipe! This is a delicious take on the classic buffalo chicken dip. Don’t get me wrong, I love some buffalo chicken dip! But I wanted to make a vegan version because chickpeas are way more affordable than chicken. Also it’s fun to try new things in the kitchen, especially plant based. I always love experimenting with vegan recipes! Hope you all enjoy this vegan buffalo ‘chicken’ dip.

Chicken Enchilada Dip

Easy and tasty chicken enchilada dip! Perfect simple recipe to make to bring to a gathering! You can sub ground turkey or beef, too.

Ingredients

1 lb ground chicken 

Olive oil

1 tsp garlic powder 

1/2 tsp salt 

1/4 tsp black pepper 

1/2 diced red onion

1 can of black beans, drained and rinsed

1 can of sweet corn

3 cups enchilada sauce

1/2 cup shredded cheddar cheese

1/41/2 cup mozzarella cheese

Method

Heat a pan over medium heat 

Add olive oil + diced onion 

Sauté for 3-5 minutes 

Add the ground chicken + spices 

Sauté until browned 

Add in the black beans, corn, enchilada sauce, and cheese 

Bake in the oven at 450F for 5 minutes 

Then turn oven to broil and broil for 1-2 minutes to get the cheese nice and crispy 

Makes about 10 servings! 

Serve with tortilla chips!
