Vegan Banana Bread Bites
I love banana bread in any form but these bites just hit different. Mini form anything is just more fun and therefore tastier, right? Plus these are made with only 5 ingredients and are gluten free + vegan. We’ve been trying to eat more plant based recipes lately and these bites are a great plant based breakfast, snack, or dessert. Basically, these vegan banana bread bites are tasty any time of time!

So, technically these are banana bread brownies than I cut into smaller squares. Trust me though, the bites are better! You can cut them however you want but I cut mine into 16 little bites. I added a little peanut butter on top too because why not? A little extra peanut butter makes any dessert better!
Like I said above, this recipe only has 5 ingredients which makes them really easy to make. I haven’t tested any substitutions yet! I have tried them as mini muffins and regular muffins. Both ways were just as great!
What You Need:
Ripe Bananas
Creamy Peanut Butter (organic works best)
Baking Powder
Recipe Tips:
I normally include recipe tips but this one is seriously so straight forward. The only tips I have are to make sure your bananas are ripe, use an organic peanut butter if you can, and let the cool completely before slicing. They cook more after they come out of the oven so that’s important!
Other than that, just try not to eat these vegan banana bread bites in one sitting. Or do whatever makes your heart happy!

Vegan Banana Bread Bites

Ingredients
3 ripe bananas
1/3 cup peanut butter
2/3 cup coconut flour
1/3 cup maple syrup
1 tsp baking powder
Method
- In a bowl, mix all of the ingredients together well.
- Line an 8×8 brownie pan with parchment paper (makes it easy to remove)
- Add the banana bread batter in
- Bake at 350F for 32-34 minutes.
- These are pretty soft so you can put them in the fridge to firm up for 30 minutes if you want.
- Or let them cool on the counter, slice, add some more Pb, and enjoy! Store in the fridge 4-5 days.
- I cut mine into 16 squares to make them bite sized.
