I am obsessed with these healthy pumpkin protein bites, made without oats and with my favorite protein powder! These are vegan, gluten free, plant-based, and sooo tasty! Just perfect for fall – give me pumpkin everything. I love having this on hand for a quick snack or dessert. So easy to grab and go! They are no bake – just mix the ingredients together, toss in the fridge, and have a delicious treat. Enjoy!

Almond butter  

Coconut Flour

Maple Syrup

Cinnamon 

Vanilla Extract

Pumpkin puree

Vanilla protein powder

Pumpkin Protein Bites

Ingredients

2 cups almond butter  

1/2 cup Coconut Flour

1/2 cup Maple Syrup

2 tsp Organic Cinnamon 

2 tsp Vanilla Extract

1/2 cup Pumpkin Puree

1/3 cup vanilla protein powder 

Icing: 1/3 cup powdered sugar + 1-2 tbsp milk 

Method

In a bowl, mix together the, almond butter, pumpkin puree, cinnamon, and maple syrup & vanilla extract 

Stir and then add in the coconut flour and protein powder 

Then roll the dough into about 10-12 balls  

Line a small plate with parchment paper and place the balls on it

In a small bowl, whisk together the icing ingredients, start with 1 tbsp milk and slowly add more to thin the icing out to your liking 

Drizzle the bites with the icing 

Put the plate in the fridge for 1 hour 

Enjoy! Store in the fridge.
