Gluten Free and Paleo Pumpkin Pie Bites

The ultimate fall dessert- pumpkin pie! But who has time to make a pumpkin pie on an average day?! These gluten free and paleo pumpkin pie bites are the perfect solution when you’re craving a slice of pumpkin pie but don’t want to put in the effort. Or if you aren’t great at baking, these are an easy dessert vs a complicated pie.

Pumpkin Pie Bites (paleo, gluten free)

Ingredients

Crust ingredients:
1 egg
1/2 cup almond flour
1 tbsp coconut flour
1/2 cup cashew butter
1/4 cup coconut sugar
2 tbsp maple syrup
1/2 tsp baking powder
1/2 tsp vanilla
Pumpkin filling:
1 cup pumpkin purée
1/2 cup maple syrup
1 egg
1 tsp pumpkin pie spice
2 tbsp nut butter
1 tsp vanilla

Method

  1. In one mixing bowl, whisk the egg and add in the crust ingredients. Mix together well
  2. In another mixing bowl, whisk the egg and add in the rest of the pumpkin filling ingredients
  3. Spray a mini cupcake pan with non stick spray (I’ve only tested as mini size)a
  4. Add the crust mixture to each cup, filling about 3/4 of the way. Then take your thumb and press a hole into it. If it sticks to your hand, you can spray a little non stick spray on your thumb! Or dab a little oil on your thumb.
  5. You want to create a hole for the pumpkin filling but leave some at the bottom and on the sides
  6. Then scoop in the pumpkin filling. You might have a little pumpkin filling leftover so I made crust less bites that were so good!
  7. Bake at 350 for 25 mins.
  8. Let cool completely then take a knife around the edges to remove. Makes 16-20 mini cups!
