Cherry Bars
It’s cherry season!! Aka time to bring out all of the delicious cherry baked goods. Because what else are you supposed to do with a bunch of cherries besides bake?! I mean, you can always eat them plain but these cherry bars are way more fun! They’re paleo, gluten free, grain free, and so perfect for the summer! Make to bring to a bbq or make to have as a pick me up in the evenings after a long day. You can’t go wrong with whatever you decide to make these for!

These bars have a cookie like crust and a cherry jam filling on the inside. The filling was my favorite part- I could’ve eaten just that with a spoon. Of course, the cookie texture surrounding it didn’t hurt though š
Let’s Make These Bars!
First, you’ll whisk the eggs then add in the rest of the ingredients for the bars. I mixed mine in my KitchenAid Stand Mixer but you could use a mixing bowl + hand mixer. You’ll want to make sure it’s blended together well. Put in the fridge and let cool 1 hour.
Then line a brownie pan with parchment paper and press 2/3 of the dough into the pan. Bake for 15 minutes at 350F.
Then make your cherry filling! Heat a saucepan over medium heat, add all of the your ingredients, let simmer for 10 minutes. You can use fresh or frozen cherries.
You’ll want it to thicken and be a jam like texture.
Add on top of the semi-cooked crust. Then add the last 1/3 of crust on top.
Bake at 350F for 30-35 minutes. Let cool completely then enjoy!

Ingredients
Bars:
2 eggs
1 1/2 cup almond flour
1/4 cup coconut flour
2/3 cup cashew butter
2 tbsp ghee or butter (softened not melted)
1/2 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla
1 tsp baking powder
Cherry filling:
2 cups pitted cherries (Fresh or frozen work)
1 tsp chia seeds
2 tbsp maple syrup
1/2 tsp vanilla
1 tbsp tapioca flour (Can sub cornstarch)
Method
- In a bowl, whisk the eggs.
- Then mix together the rest of the bar ingredients.
- Chill the bar dough for 1 hour
- For the cherry filling: heat a saucepan over medium heat and add all the ingredients.
- Stir every few minutes and let it cook for about 10 minutes, until itās more of a jam like texture.
- Set aside and let cool.
- Take the dough out of the fridge
- Line a brownie pan with parchment paperback
- Add 2/3 bar mixture to a pan and bake 15 mins at 350F
- Add filling and rest of the crust
- Bake another 30-35 minutes
- Let cool completely then slice!
- Store in the fridge
