No Bake Magic Bars

No bake recipes are life savers in the summer! Not turning on the oven is SO nice in the summer. Who wants to spend hours in a hot kitchen when it’s 95 degrees outside? Instead, make these no bake magic bars and save yourself from sweating up a storm in your kitchen.

No Bake Magic Bars (Gluten Free, Dairy Free)

These bars have 3 layers: peanut butter layer, chocolate layer, and a coconut cream layer. Then I topped the bars with chocolate chips and peanut butter coconut bars. You can use any type of bar that you want- a candy bar, a protein bar, more chocolate chips, or peanut butter chocolate chips.

Paleo Option:

To make this recipe paleo, you can replace the peanut butter with cashew butter, almond butter, or pecan butter.

Recipe Steps:

Now let’s make these no bake magic bars! First, you’ll combine the peanut butter, coconut flour, and maple syrup together in a bowl.

Then, line a pan with parchment paper, Press the peanut butter layer down into the pan. Set the pan aside and make the chocolate layer.

In a small bowl, add the chocolate chips with the coconut oil. Melt for 30 seconds, stir, and repeat until it’s completely melted.

Then mix together the melted chocolate with more peanut butter. Pour the chocolate layer on top of the peanut butter layer. Place in the freezer for 1 hour.

After the hour, make the coconut layer. Mix the coconut cream with the maple syrup, If you use coconut milk, drain the liquid and only use the white part. Add on top of the chocolate layer.

Then add the perfect bar chunks and chocolate chips on top.

Chill another 30 minutes. Then enjoy! I set mine out on the counter a little bit so they soften a bit.

Store in the freezer in an airtight container.

No Bake Magic Bars (Gluten Free, Dairy Free)

Ingredients

Peanut butter layer:
1 cup runny, organic Peanut butter
1/3 cup maple syrup
1/3 cup coconut flour
Chocolate layer:
1 cup chocolate chips
1 tbsp coconut oil
1/2 cup Peanut butter
Coconut Layer:
15 ounce chilled coconut cream*
2 tbsp maple syrup (use more if you want it sweeter)
Toppings:

1/3 cup chocolate chips

Method

  1. In a mixing bowl, mix the peanut butter, coconut flour, and maple syrup together well.
  2. Line an 8×8 brownie pan with parchment paper.
  3. Then press the peanut butter layer into it. Set aside.
  4. Then make the chocolate layer.
  5. Melt the chocolate chips in the microwave with the coconut oil for 30 seconds, stir, repeat every 30 seconds until melted.
  6. Add to a mixing bowl with the peanut butter.
  7. Mix together
  8. Then pour on top of the peanut butter layer.
  9. Try to smooth it out with a spatula
  10. Freeze for 1 hour
  11. Right before you remove this layer, make the Coconut layer.
  12. I kept the coconut cream in the fridge. It’s easier to work with this way I find! You can also use canned coconut milk but drain the liquid (save it for smoothies) The liquid makes this layer too runny.
  13. Add the coconut cream to a mixing bowl and mix it well with the maple syrup. Use a hand mixer or a stand mixer to make sure it’s kind of whipped.
  14. Add on top of the chocolate layer.
  15. Then add the Perfect Bars chopped into small pieces.
  16. Place in the freezer for 30 minutes.
  17. Remove, let sit out just a few minutes, then slice and enjoy!
  18. Store extras in the freezer

Notes

* not coconut milk, just coconut cream. You can use coconut milk but drain the liquid and only use the white part
