Gluten Free Peppermint Mocha Pancakes

These gluten free peppermint mocha pancakes are sure to be a hit on Christmas morning! They’re easy to make so you can whip them up while still enjoying the morning. I topped mine with crushed candy canes which is optional but recommended because it’s fun and festive! If you’re a mint chocolate chip fan, these pancakes will be a favorite for you. Just enough peppermint flavor without being overwhelming!

What You Need For This Recipe:

Eggs

Banana

Unsweetened Cocoa Powder

Chocolate Chips

Peppermint Extract

Candy Canes

Recipe Tips:

When you mash the banana for these peppermint mocha pancakes, leave it a little chunky. Leaving the banana chunky allows the pancakes to have some texture!

Also, you can sub chocolate protein powder for the unsweetened cocoa powder. It gives them a great flavor and it doesn’t change the texture!

Make sure you grease your pan before making the pancakes so they don’t stick. Nothing worse than going to flip the pancakes and it makes a total mess everywhere!

Gluten Free Peppermint Mocha Pancakes

Gluten Free Peppermint Mocha Pancakes. The perfect healthy Christmas morning breakfast! Or any winter weekend when you’re craving some mint chocolate pancakes.

Gluten Free Peppermint Mocha Pancakes

Ingredients

Pancakes:

Makes 2 servings

1 banana

2 eggs

3-4 tbsp chocolate chips

1 tbsp unsweetened cocoa powder

Splash of peppermint extract (optional)

Toppings:

1/2 crushed candy cane

1 tbsp melted chocolate chips

 

Method

  1. Whisk the egg, mash the banana (leave it a little chunky to give the pancakes texture)
  2. Then add in the cocoa powder.
  3. Mix together then add in the chocolate chips.
  4. Heat a pan over low medium heat, add a little ghee or butter (I used @fourthandheart ghee), add a spoonful of batter.
  5. Make them small so they’re easy to flip! Makes 8-9 mini pancakes.
  6. Topped with melted chocolate chips + 1/2 crushed candy cane!
