This bang bang tofu is vegan and gluten free, a delicious plant based meal. It’s perfect for dinner or for an appetizer. I love making this sauce for shrimp too so if you aren’t vegan, that’s a great recipe too. But this tofu version is so good whether you’re fully plant based or just want a tasty recipe!

almond milk 
coconut flour 
tapioca flour 
garlic 
salt 
vegan mayonnaise 
sriracha 
paprika

Vegan Taco Zucchini Boats (healthy, gluten free)

These vegan taco stuffed zucchini boats are ready in under 30 minutes and made with only 5 ingredients! You can add whatever toppings you want, I did avocado and vegan feta cheese. I’m not vegan personally but we do meatless mondays over here so I like coming up with vegan recipes. This recipe is the perfect easy dinner for a meatless monday or any night of the week. Another easy and healthy meal prep for you all. These instant pot vegan burrito bowls are ready in no time and require minimal effort. That’s the main reason I love my instant pot, the meals are quick and so easy. I prefer it to a crockpot for this reason.

Bang Bang Tofu (vegan, gluten free)

Ingredients

Tofu:

1 package extra firm tofu
1/2 cup almond milk
2/3 cup coconut flour
1/3 cup tapioca flour
1 tsp garlic
1/2 tsp salt
Sauce:
1/2 cup vegan mayonnaise
2 tsp sriracha
1/4 tsp paprika
1/4 tsp chili powder
1 tsp garlic
Sprinkle of salt

Method

  1. In a shallow bowl, add the milk
  2. In another shallow bowl, mix the flours, garlic, and salt together
  3. Dip the tofu in the milk then in the flour mixture. I did multiple tofu blocks at once
  4. You can make them 1 of 2 ways:
    1: Heat a skillet over low medium heat
    Add a generous amount of oil. I used avocado oil
    Then add the tofu. I did two batches
    Cook for 3-4 minutes, flip, add a little more oil and cook until they’re browned
    2. Preheat oven at 400F for and bake for 30 minutes, flipping halfway through.
    With either method, once it’s done:
  5. Add to a bowl and let them cool for a few minutes
  6. Then in a small bowl mix the sauce ingredients.
  7. Pour the sauce mixture over the tofu and enjoy!
