Onion
Olive Oil
Sweet Potatoes
Can of corn
Black beans
Diced Tomatoes
Veggie broth
Garlic powder
Onion powder
Chili powder
Cumin
Chipotle powder
Salt
Full fat coconut milk

Ingredients
- 1 pepper diced
- 1 onion diced
- olive oil
- 3 cups chopped sweet potatoes
- 1 15 ounce can of corn
- 1 15 ounce can of black beans
- 1 15 ounce can of diced tomatoes
- 4 cups of veggie broth
- 1 1/2 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 1/2 tsp cumin
- 1 tsp Chipotle powder
- 1/2 tsp salt
- 1 can full fat coconut milk
Method
- Turn your instant pot to sauté mode and add the onion and pepper
- Sauté for 5 minutes in olive oil.
- Add in everything else and stir together.
- Lock the lid on and pressure cook on high for 4 minutes
- let sit for 5 minutes then quick release
- add the coconut milk in and stir
- serve with tortillas, avocado, salsa, whatever you want!
