Vegan Sweet Potato & Black Bean Soup

This vegan sweet potato and black bean soup is made in the instant pot. A delicious and healthy dinner that makes for the perfect meal prep. It reheats well and you can add a lot of different toppings to switch things u throughout the week! Are you big into meal prep? This year we’ve been trying to have healthy breakfasts, snacks, and lunches on hand. I find soups are the easiest thing to make because they’re such minimal effort!

What You Need For The Recipe:

Bell Pepper


Olive Oil 

Sweet Potatoes 

Can of corn 

Black beans 

Diced Tomatoes 

Veggie broth

Garlic powder 

Onion powder 

Chili powder 


Chipotle powder


Full fat coconut milk

Vegan Sweet Potato and Black Bean


  • 1 pepper diced
  • 1 onion diced
  • olive oil
  • 3 cups chopped sweet potatoes
  • 1 15 ounce can of corn
  • 1 15 ounce can of black beans
  • 1 15 ounce can of diced tomatoes
  • 4 cups of veggie broth
  • 1 1/2 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp Chipotle powder
  • 1/2 tsp salt
  • 1 can full fat coconut milk


  1. Turn your instant pot to sauté mode and add the onion and pepper
  2. Sauté for 5 minutes in olive oil.
  3.  Add in everything else and stir together.
  4. Lock the lid on and pressure cook on high for 4 minutes
  5. let sit for 5 minutes then quick release
  6. add the coconut milk in and stir
  7.  serve with tortillas, avocado, salsa, whatever you want!
