Watermelon fries with yogurt dip, the perfect summer snack! This yogurt dip is so easy, only 3 ingredients. And not crazy weird ingredients that you’ve never heard of. Sometimes I see recipes that look good and then I look at the ingredients and have never heard of them haha. I grew up in a small town in Missouri that didn’t have a ton of options for grocery stores. I like to keep my recipes simple and accessible. This dip only needs greek yogurt, lime juice, and honey. That’s it! Plus the watermelon and you’ve got a delicious, healthy snack.
These roasted buffalo chickpeas are great on top of this salad, thrown into a tacos, or just great on their own! I love making this buffalo chickpea salad for an easy 20 minute meal or for a vegan meal prep for the week! I think the chickpeas pair well with a bunch of veggies or just a few. They have a lot of flavor so you could just toss them on a bed of greens with a dressing! You can’t go wrong!

Chopped Brussels Sprouts Spring Salad 🥗 Ready in just 10 minutes! And delicious to eat all spring & summer long. Packed with superfoods like kale, blueberries, and avocado.
Ingredients
10 ounces shaved Brussels sprouts
2 cups chopped kale
2 cups chopped spinach
2 cups blueberries
1 peeled & cubed avocado
1 cup chopped walnuts
1/3 cup diced onion
1/2 cup feta cheese
Dressing:
1/3 cup extra virgin olive oil
1/4 cup lemon juice
1 tsp lemon zest
1/2 tbsp dijon mustard
2 tbsp honey
2 tsp garlic powder
Salt & pepper to taste
Method
Add all of the salad ingredients to a bowl & toss
Mix together the dressing ingredients in a food processor
Add to the salad & toss again
Serve & enjoy! Makes about 6-8 servings!
