Buffalo Cauliflower Pizza

This is basically my dream meal! I love buffalo cauliflower and I love pizza. Added them into one epic meal was one of the best food decisions I’ve ever made. You can use any pizza crust for this recipe but I used my sweet potato pizza crust. I made it vegan by using a flaxseed egg. It worked perfectly! We have made this buffalo cauliflower pizza weekly this month and have enjoyed it more each time. It’s gluten free and vegan too. We used a vegan ranch on top but you can use regular ranch or whatever sounds good!

Strawberry Balsamic Whipped Feta

This strawberry balsamic whipped feta is a delicious and easy appetizer or side dish. Honestly I liked just having it as a snack throughout the week too! I had whipped feta for the first time back in May and I’ve been obsessed ever since. I love the sweet and salty combo of the strawberries and feta too! This recipe has only 5 ingredients and takes about 10 minutes to make. It’s a must make this summer!

Vegan Queso

A nut free, vegan queso! Most vegan queso recipes use cashews or almonds which are great options but for a queso lover like me, the cost adds up quickly. Plus I know there are nut free people who can’t have them at all! So this recipe is for you guys and the people like me who just like saving money (because then you can spend more at Target! haha). This recipe is also paleo and gluten free. Hope you enjoy!

Blackberry Ricotta Flatbreads

You have to try this easy summer meal. Blackberry Ricotta Flatbreads that are ready in just 15 minutes!

2 flatbreads of choice 

1 tbsp olive oil

1/2 cup mashed blackberries 

1 cup shredded mozzarella

3/4 cup ricotta

1/2 cup fresh blackberries 

2 tbsp fresh basil


Prepare your flatbreads according to the packaging instructions. I got these from Trader Joe’s and they just reheat for 1 minute.

Preheat oven to 450F

Spread olive oil over each flatbread 

Add mashed blackberries 

Add mozzarella cheese 

Add ricotta 

Add fresh blackberries on top 

Bake for 10 minutes 

Remove and top with fresh basil 

Slice & enjoy! 

Makes 2 flatbreads!
