Instant Pot Buffalo Chicken Soup
I am in love with Instant Pot soups. I try to make other options because I know not everyone has an Instant Pot but it is by far the easiest and quickest way to make soup! And they’re so easy to clean which I love. I topped my buffalo chicken soup with some jalapenos and cilantro. Add some tortilla chips and avocado too- so good!
I love taking traditional recipes, tweaking them a bit, and making them paleo. Basically that means making a few adjustments and removing the grains. This soup is still packed with flavor, veggies, and so cozy for cold evenings. I am big on eating warm food in the winter and cold food in the summer. Some people can eat cold food all winter long but not me. I love a cozy, hot dinner and this paleo chicken and rice soup always hits the spot!
Chicken Tender Parmesan Pasta
Chicken Tender Parmesan Pasta, gluten free, air fryer, 15 minute meal.
Ingredients
- 1 1/2 pound chicken tenders
- 1 tbsp olive oil
- 1/4 cup Parmesan cheese
- 1 tsp garlic
- 1/2 tsp red pepper flakes
- 1/2 tsp oregano
- 1/2 tsp parsley
- Salt and pepper
Other: - 1 package Chickpea pasta
- marinara sauce
- More Parmesan
Method
In a small bowl, mix the Parmesan cheese and spices
Add the chicken tenders to a large bowl, add the olive oil, mix to coat the chicken with the oil
Add the Parmesan spice mixture and mix again to coat the chicken
Air fry at 400F for about 12 minutes (until internal temp is 165F), flipping halfway through
Make pasta according to the package instructions
Add the sauce on cooked noodles, and the chicken tenders (I’d recommend cutting them up before adding), and then more Parmesan cheese! Makes enough for about 5 meals!
