Crockpot Tortellini Soup
Crockpot Tortellini Soup š² the perfect weeknight dinner with tons of leftovers for the week! It takes minimal effort to make, which is always a must during the week!
Ingredients
1 lb ground Italian sausageĀ
1 small white onionĀ
6 cups chicken bone brothĀ
1/2 cup finely chopped carrotsĀ
1/2 cup finely chopped celeryĀ
28 ounce canĀ crushed tomatoesĀ
14 ounce can diced tomatoesĀ
2 tbsp tomato pasteĀ
Spices:
1 tsp garlic powderĀ
1/2 tsp saltĀ
1/2 tsp thymeĀ
1/2 tsp oregano
1/2 tsp pepperĀ
1 tsp red pepper flakes (optional)Ā
18 ounces tortellini pastaĀ
2 1/2 cups baby spinachĀ
4 ounce cream cheese (room temp)
Method
Heat a skillet over medium heat. Add the Italian sausage meat and diced onion. SautƩ for 5-7 minutes. Drain the fat and add to the crockpot
While it cooks, chop the carrots and celery. Add all ingredients except for the tortellini, spinach, and cream cheeseĀ to the crockpot. Cook on high for 3-4 hours or low for 7-8 hours.Ā
When you have 30 minutes left, add the tortellini, cream cheese, and spinach. Stir and continue to cook on high.
Serve and enjoy!
