Crockpot Tortellini Soup
Crockpot Tortellini Soup the perfect weeknight dinner with tons of leftovers for the week! It takes minimal effort to make, which is always a must during the week!

Ingredients
1 lb ground Italian sausage
1 small white onion
6 cups chicken bone broth
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
28 ounce can crushed tomatoes
14 ounce can diced tomatoes
2 tbsp tomato paste
Spices:
1 tsp garlic powder
1/2 tsp salt
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp pepper
1 tsp red pepper flakes (optional)
18 ounces tortellini pasta
2 1/2 cups baby spinach
4 ounce cream cheese (room temp)
Method
Heat a skillet over medium heat. Add the Italian sausage meat and diced onion. Sauté for 5-7 minutes. Drain the fat and add to the crockpot
While it cooks, chop the carrots and celery. Add all ingredients except for the tortellini, spinach, and cream cheese to the crockpot. Cook on high for 3-4 hours or low for 7-8 hours.
When you have 30 minutes left, add the tortellini, cream cheese, and spinach. Stir and continue to cook on high.
Serve and enjoy!
